Vegan Overnight Oats

One of the breakfasts that I’ve been experimenting with lately is vegan overnight oats. The original comes from Oh She Glows. I don’t use protein powder since it’s not only expensive, but I like to eat my food. More and more I’m considering buying it just because it’s quicker. I like not having to rely on it. Make sure to make the oats the night before so they are ready in the morning.

Apple Cinnamon Vegan Overnight Oats

  • .5 cup old fashioned oats (I’m using the instant now because my grandmother gave me a whole box of it and I’m the only one who will eat it. Old fashioned oats are much better)
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • .5 cup almond milk (or any nut milk) plus .5 cup water
  • apple
  • cinnamon
  • 1 tbsp peanut butter

Whisk the oats, chia seeds, vanilla, almond milk and water in a bowl for two minutes. Cover and leave in fridge overnight.

In morning, cube the apple and toss in cinnamon. Layer the overnight oats and apple mixture in a clear container. Top with peanut butter and a slice of apple.

I don’t generally sweeten things. This would probably be amazing with a few teaspoons of brown sugar along with the cinnamon.

I will admit though, that banana and pb overnight oats are greatly superior to the apple.

Banana and PB Overnight Oats

  • 1 tsp vanilla extract
  • .5 cup almond milk (or any nut milk) plus .5 cup water
  • .5 banana, frozen or raw
  • 1 tbsp peanut butter

Whisk the oats, chia seeds, vanilla, almond milk and water in a bowl for two minutes. Cover and leave in fridge overnight.

In morning, give the oats a good mix. Place the sliced banana on top and top with the peanut butter. I like to use frozen bananas but raw are fine. If you’re really feeling ambitious you can make banana soft serve.

Don’t be creeped out by the chia seeds. They look kind of gooey like tapioca but I think they taste good. Plus, they’re so good for you!

Overnight oats keep me full for a while, and it feels like i’m eating dessert for breakfast. My boyfriend thinks I am crazy that I can eat the whole bowl. This makes a big bowl but its mostly water. You’ll be shocked at how the chia seeds soak up the water. The night before, the oats will sink to the bottom and you’ll have what looks like oatmeal soup. By the next day, the mixture will be so thick you can flip it upside down without it pouring out!

This is one of my new favorite breakfasts. I’m thinking I might try raspberry sometime soon. Has anyone used chia seeds for anything else besides oatmeal, pudding or smoothies? I feel like they have so much potential.
